Ingredients

4 salmon fillets (approximately 6 oz each)

1 bunch of fresh asparagus, trimmed

2 tablespoons olive oil

1 lemon (zested and juiced)

3 cloves of garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

1 teaspoon salt (or to taste)

½ teaspoon freshly ground black pepper

Lemon slices (for garnishing)

Fresh parsley, chopped (for garnishing)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). For an easy cleanup later, line a baking sheet with parchment paper.

Prepare the Marinade: In a small mixing bowl, whisk together 2 tablespoons of olive oil, the zest of one lemon, the juice of the lemon, minced garlic, dried thyme (or fresh thyme if using), salt, and black pepper. Mix until all the ingredients are well combined and set aside.

Prep the Salmon and Asparagus: Arrange the salmon fillets in the center of the lined baking sheet. Place the trimmed asparagus around the salmon fillets in a single layer. Drizzle half of the prepared marinade over the salmon, ensuring each fillet is well-coated. Use the remaining marinade to drizzle over the asparagus evenly.

Bake: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes. The salmon should be fully cooked when it flakes easily with a fork, and the asparagus should be tender yet crisp.

Garnish: Once cooked, remove the baking sheet from the oven. Add a touch of color and flavor by garnishing the salmon with lemon slices and a sprinkle of chopped fresh parsley.

Serve: Serve the dish hot, pairing it with your choice of side, such as fluffy quinoa or a refreshing green salad for a well-rounded meal. Delight in your nourishing and delectable creation!
