Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (choose your favorite brand for the best flavor)

2 cups shredded cheese (a blend of cheddar and mozzarella is highly recommended)

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/2 cup corn (use canned or frozen, ensuring it is thawed)

1 jalapeño, sliced (optional, for those who enjoy heat)

2 tablespoons olive oil (divided)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Avocado slices (for serving)

Instructions

Prepare the BBQ Chicken Filling: In a large mixing bowl, combine the shredded chicken and BBQ sauce. Stir well until the chicken is evenly coated with the sauce. Feel free to adjust the amount of BBQ sauce based on your personal sweetness or tanginess preference.

Assemble the Quesadillas: Lay out the flour tortillas flat on a clean surface. On one half of each tortilla, place an equal portion of the BBQ chicken mixture. Next, top the chicken with a generous amount of shredded cheese, followed by a scattering of sliced red onion, corn, and jalapeño slices if you're opting for some spice. Carefully fold each tortilla in half to securely enclose the delicious filling.

Cook the Quesadillas: Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and let it heat until shimmering. Place two quesadillas in the skillet. Cook for about 3-4 minutes until the bottom side is golden brown and crispy. Gently flip the quesadillas, adding the remaining tablespoon of olive oil if needed. Cook for another 3-4 minutes until the cheese has melted and the second side is also crispy.

Repeat and Keep Warm: As each batch of quesadillas finishes cooking, transfer them to a cutting board and keep them warm by covering them with a clean kitchen towel. Continue the cooking process with the remaining quesadillas.

Serve: Once all quesadillas are cooked, slice them into triangles with a sharp knife. Arrange them artistically on a serving platter. Garnish with a sprinkle of chopped cilantro for a fresh touch. Serve with small bowls of sour cream and avocado slices on the side for dipping.
