1 lb (450g) ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup beef broth (or water)

Optional toppings: shredded cheese, sour cream, chopped green onions, freshly chopped cilantro

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat over medium heat, then add the ground beef. Cook, breaking it apart with a spatula until it is browned and no longer pink, about 5-7 minutes. If there is excess fat, drain it carefully.

    Sauté the Vegetables: Add the finely chopped onion and minced garlic to the pot with the beef. Sauté for about 3-4 minutes, stirring frequently until the onion becomes soft and translucent.
