1 cup shredded sharp cheddar cheese

1 cup milk (use dairy or a non-dairy alternative based on preference)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and black pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons grated Parmesan cheese (optional, for topping)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 2-quart casserole dish with cooking spray or a little olive oil to prevent sticking.

    Cook the Rice: In a medium saucepan, combine the uncooked brown rice and vegetable broth. Bring the mixture to a rolling boil, then reduce the heat to low. Cover the saucepan and let it simmer for about 45 minutes, or until the rice is tender and all the liquid has been absorbed. Remove from heat and set aside to cool slightly.

      Sauté the Vegetables: As the rice cooks, heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes until it becomes soft and translucent. Then, add the minced garlic to the skillet and sauté for another minute or until fragrant, being careful not to burn it.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, fresh broccoli florets, milk, ¾ cup of shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix everything together thoroughly until all ingredients are evenly combined.

          Transfer to Casserole Dish: Carefully pour the mixture into the prepared casserole dish, spreading it out evenly to ensure consistent cooking.

            Add Topping (Optional): If you’d like a golden, crunchy topping, mix the breadcrumbs with the remaining ¼ cup of shredded cheddar cheese and the grated Parmesan cheese in a small bowl. Sprinkle this mixture evenly over the top of the casserole.
