1 pound large shrimp, peeled and deveined

4 medium zucchini, spiralized into zoodles

4 tablespoons unsalted butter

4 cloves garlic, minced

1 lemon, juiced and zested

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Prepare the Zoodles: Using a spiralizer, transform the zucchini into zoodles (zucchini noodles). If you don't have a spiralizer, look for pre-packaged zucchini noodles at your local grocery store. Set the zoodles aside on a plate.

    Cook the Shrimp: In a large skillet, heat the unsalted butter over medium heat until melted. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until the garlic is fragrant but not browned.
