Ingredients

1 lb large shrimp, peeled and deveined

3 bell peppers (1 red, 1 yellow, 1 green), sliced into strips

1 medium red onion, thinly sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

Juice of 1 fresh lime

Fresh cilantro, finely chopped (for garnish)

Tortillas (flour or corn) for serving

Optional toppings: sliced avocado, sour cream, fresh salsa

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To simplify cleanup, line a large baking sheet with parchment paper or aluminum foil.

Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure the spices are fully combined to create a flavorful marinade.

Combine Shrimp and Vegetables: Add the peeled and deveined shrimp, along with the sliced bell peppers and red onion, to the bowl with the marinade. Use a spatula or your hands to gently toss all the ingredients until the shrimp and vegetables are evenly coated in the marinade.

Arrange on the Sheet Pan: Carefully transfer the marinated shrimp and vegetables onto the lined baking sheet. Spread them out into a single layer to ensure that they cook evenly and get a nice sear.

Bake: Place the baking sheet in the preheated oven and bake for approximately 15 minutes. The shrimp should turn a lovely pink and opaque color, while the vegetables should become tender yet retain their vibrant colors.

Add Lime Juice: Once done baking, remove the pan from the oven. Immediately drizzle the fresh lime juice over the shrimp and vegetables for an added zing of flavor.

Serve: Serve the sizzling shrimp and veggies hot, accompanied by warm tortillas. Garnish with freshly chopped cilantro, and invite your guests to customize their fajitas with optional toppings like creamy avocado, tangy sour cream, or zesty salsa.

Enjoy: Bring friends and family to the table for a fun and interactive meal where everyone can build their own delicious shrimp fajitas together!
