Ingredients
  

4 medium bell peppers (any color)

1 lb ground turkey or beef

1 cup cooked rice (white or brown)

1 cup black beans (drained and rinsed)

1 cup corn (frozen or canned)

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

1 cup salsa

1/4 cup sliced jalapeños (optional)

Sour cream and chopped cilantro for serving (optional)

Tortilla chips for serving

Instructions
 

Set your air fryer to preheat at 400°F (200°C) for about 5 minutes while you prepare the peppers.

    Slice the tops off the bell peppers and take out the seeds and inner membranes.

      In a large bowl, mix the ground turkey (or beef), cooked rice, black beans, corn, garlic powder, onion powder, cumin, smoked paprika, along with salt and pepper. Stir until thoroughly blended.

        Fill each bell pepper with the meat and rice blend, pressing gently to ensure they are fully packed.

          Stand the stuffed peppers in the air fryer basket. Ensure they have space; you might need to cook them in multiple batches depending on your air fryer capacity.

            Air fry the stuffed peppers at 400°F (200°C) for 10 minutes.

              Carefully take out the basket and layer each stuffed pepper with shredded cheese and a spoonful of salsa.

                Put the basket back into the air fryer and continue cooking for another 5 minutes, or until the cheese is melted and bubbling.

                  Take the peppers out of the air fryer and allow them to cool slightly before cutting them into nacho-style pieces.

                    Serve the stuffed pepper nachos alongside tortilla chips, and remember the sour cream and cilantro if desired!
