Ingredients

For the Lumpia:

1 pound ground pork (or chicken)

1 cup finely chopped carrots

1 cup finely chopped green beans

1 cup bean sprouts

½ cup finely chopped onions

2 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon oyster sauce

½ teaspoon freshly ground black pepper

1 package lumpia wrappers (approximately 20-30 pieces)

1 egg, beaten (for sealing)

Vegetable oil, for frying

For the Sweet Chili Sauce:

1 cup granulated sugar

½ cup water

¼ cup white vinegar

2 tablespoons chili flakes (adjust according to your desired spice level)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 teaspoon garlic powder (optional, enhances flavor)

Instructions

Prepare the Filling:

    - In a large mixing bowl, combine the ground pork (or chicken) with the finely chopped carrots, green beans, bean sprouts, onions, and minced garlic. Use a fork or your hands to mix the ingredients thoroughly until well-combined.

      - Incorporate the soy sauce, oyster sauce, and ground black pepper into the mixture, ensuring an even distribution of flavors. Set the filling aside to allow the flavors to meld.

        Wrap the Lumpia:

          - Lay one lumpia wrapper flat on a clean surface, positioning it so that one corner is facing towards you (like a diamond shape).

            - Spoon about 1-2 tablespoons of the filling near the corner closest to you, making sure not to overfill.

              - Fold the corner over the filling, then tuck in the sides towards the center, and roll the wrapper tightly away from you. Seal the edge with a brush of the beaten egg. Repeat this process with the remaining wrappers and filling, placing wrapped lumpia on a tray.

                Make the Sweet Chili Sauce:

                  - In a medium saucepan, combine the sugar, water, vinegar, and chili flakes. Heat the mixture over medium heat, stirring occasionally until the sugar has completely dissolved.

                    - Once dissolved, bring the mixture to a gentle boil. Gradually add the cornstarch slurry while stirring continuously until the sauce thickens to your desired consistency, about 2-3 minutes. If using, stir in the garlic powder at this stage. Remove from heat and allow it to cool slightly.

                      Fry the Lumpia:

                        - Heat a generous amount of vegetable oil in a deep skillet or frying pan over medium heat. You can test the oil's readiness by dropping a small piece of unwanted wrapper; if it sizzles, the oil is hot enough.

                          - Carefully add the lumpia in small batches to avoid overcrowding the pan. Fry them for about 3-4 minutes, or until they are golden brown and crispy on all sides, turning occasionally.

                            - Use a slotted spoon to transfer the cooked lumpia onto a plate lined with paper towels, allowing excess oil to drain.

                              Serve:

                                - Present the crispy lumpia on a serving platter, artfully arranged for an appealing visual impact. Serve the sweet chili sauce in a small bowl alongside for dipping. Enjoy the satisfying crunch and flavorful filling that makes these lumpia irresistible!
