Ingredients

2 large apples (like Granny Smith or Honeycrisp), peeled and diced

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup packed brown sugar

1 tablespoon cornstarch

1 package of refrigerated crescent roll dough

1 egg, beaten (for egg wash)

1 teaspoon granulated sugar (for sprinkling)

Instructions

Prep the Apples: In a medium mixing bowl, combine the diced apples with lemon juice, ground cinnamon, nutmeg, brown sugar, and cornstarch. Toss everything together until the apple pieces are evenly coated. Let the mixture rest for about 10 minutes to allow the flavors to blend beautifully.

Preheat the Oven: Preheat your oven to 375°F (190°C). To ensure easy cleanup, line a baking sheet with parchment paper.

Open the Crescent Rolls: On a lightly floured surface, carefully unroll the crescent roll dough. Cut along the perforations to separate it into triangular sections.

Fill the Dough: Take a generous tablespoon of the apple mixture and place it in the center of each crescent roll triangle. Gently fold the dough over the filling to create a pocket or bundle, then firmly pinch the edges together to ensure a good seal.

Egg Wash & Sprinkle: Brush the tops of each sealed bite with the beaten egg using a pastry brush, then sprinkle a light pinch of granulated sugar over each one for a delightful sweet crunch.

Bake: Place the filled bites on the prepared baking sheet, ensuring they have space in between for puffing. Bake in the preheated oven for about 12-15 minutes, or until they are golden brown and puffy.

Cool and Freeze: Once baked, transfer the apple pie bites to a wire rack and let them cool for 10 minutes. After they've cooled, arrange them on another baking sheet lined with parchment paper and freeze for approximately one hour, or until they are firm. Once frozen, transfer the bites to an airtight container or freezer bag for long-term storage.

Serving: Enjoy these tasty bites directly from the freezer for a refreshing treat, or, for a warm version, bake them again in a preheated oven for an additional 5-7 minutes until heated through.
