Ingredients

2 cups mixed frozen berries (strawberries, blueberries, raspberries)

1 ripe banana

1 cup unsweetened almond milk (or any milk of your choice)

1/4 cup chia seeds

1 tablespoon honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

1/4 cup rolled oats (optional, for added texture)

1/4 teaspoon cinnamon (optional)

A pinch of salt

Instructions

Blend Ingredients: In a high-speed blender, add the frozen mixed berries, the ripe banana, almond milk, your choice of honey (or maple syrup), vanilla extract, and a pinch of salt. If you'd like a heartier texture, include the rolled oats and cinnamon. Blend on high until the mixture is smooth and creamy.

Incorporate Chia Seeds: After achieving a smooth consistency, add the chia seeds to the blender. Pulse the blender a few times to mix, ensuring not to over-blend; the chia seeds should remain intact for added texture.

Set the Mixture: Prepare an 8x8 inch (20x20 cm) baking dish by lining it with parchment paper, leaving some overhang for easy removal later. Pour the berry mixture into the dish, using a spatula to spread it evenly to ensure a consistent thickness throughout.

Chill: Cover the baking dish tightly with plastic wrap and place it in the freezer. Allow the mixture to freeze for at least 4 hours, or until it is solidly firm.

Slice and Serve: Once completely frozen, carefully remove the block of berry mixture by lifting it out using the parchment paper. Place it on a cutting board and slice it into bars of your preferred size.

Garnish (Optional): For an added touch, consider topping the smoothie bars with a few extra fresh berries, a drizzle of honey or maple syrup, or a sprinkle of coconut flakes before enjoying.

Store: Place the sliced bars in an airtight container, separating layers with parchment paper to prevent sticking. Store them in the freezer for up to 2 weeks, and enjoy them straight from the freezer for a refreshing treat!
