Ingredients

2 cups rolled oats

1 cup mixed frozen berries (e.g., blueberries, raspberries, strawberries)

1/2 cup smooth almond or peanut butter

1/4 cup honey or maple syrup

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional, for warmth)

1/4 cup chopped nuts (e.g., almonds, walnuts), providing extra crunch

Cooking spray or parchment paper, for lining the baking pan

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by either spraying it lightly with cooking spray or lining it with parchment paper, which will help you lift the bars out easily after baking.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, salt, and ground cinnamon (if you're using it). Stir well to mix the dry ingredients thoroughly, ensuring even distribution of the seasoning.

Melt the Wet Ingredients: In a medium microwave-safe bowl, add the smooth almond or peanut butter along with the honey or maple syrup. Heat in the microwave for 20-30 seconds, or until the mixture is warm to the touch. Stir the mix until it is smooth and fully combined.

Incorporate Vanilla: Once your wet mixture is smooth, add the vanilla extract and stir again until it is well incorporated.

Mix Wet and Dry Ingredients: Pour the warm wet mixture over the dry oat mixture in the large bowl. Use a spatula or wooden spoon to mix until everything is evenly coated. If the mixture appears too dry, you can add a small splash of water or an extra drizzle of honey to facilitate mixing.

Fold in Berries and Nuts: Gently fold in the frozen mixed berries and chopped nuts. Be careful not to crush the berries too much, as you want to maintain their shape and enjoy their burst of flavor.

Press into Baking Pan: Transfer the combined mixture into the prepared baking pan. Using the back of a spatula or your hands, press down firmly to create an even, packed layer.

Bake: Place the pan in the preheated oven and bake for 20-25 minutes. You'll know they are done when the edges turn slightly golden and the center is firm to the touch.

Cool and Cut: Once baked, remove the pan from the oven and allow it to cool completely on a wire rack. When cooled, lift the bars out using the edges of the parchment paper, transfer them to a cutting board, and slice into squares or rectangles.

Storage: Store the bars in an airtight container in the refrigerator for up to one week, or freeze them for longer storage, ensuring they remain a delicious treat for later!
