Frozen Carrot Pineapple Yogurt Pops

2 medium carrots, peeled and chopped

1 cup fresh pineapple chunks (or use canned pineapple in juice, well-drained)

1 cup plain Greek yogurt

2 tablespoons honey (or adjust based on your sweetness preference)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Instructions
 

Cook the Carrots: In a medium saucepan, add the chopped carrots and cover them with water. Bring the water to a boil. Reduce the heat and simmer for about 10-15 minutes, or until the carrots are tender enough to be easily pierced with a fork. Drain the carrots and allow them to cool slightly.

    Combine Ingredients: In a blender or food processor, combine the cooked carrots, pineapple chunks, Greek yogurt, honey, vanilla extract, lemon juice, and a pinch of salt. Blend the ingredients together until the mixture is completely smooth and creamy. Make sure there are no lumps remaining.

      Taste and Sweeten: Taste the blended mixture and, if you prefer a sweeter flavor, gradually add more honey. Blend again briefly to mix in the additional sweetener.

        Fill the Popsicle Molds: Carefully pour the carrot-pineapple mixture into popsicle molds, filling each mold almost to the top, leaving a small gap to allow for ice expansion. For added texture and visual appeal, feel free to stir in small pieces of pineapple or carrot before freezing.

          Insert the Sticks: If your popsicle molds require sticks, insert them into the center of each filled mold.

            Freeze the Pops: Place the molds in the freezer and let them freeze for at least 4 to 6 hours, or until the popsicles are completely solid.
