1 cup fresh orange juice (approximately 4-5 medium-sized oranges)

Zest of 2 medium oranges

1 cup canned coconut milk (preferably full-fat for a rich texture)

¼ cup honey or maple syrup (adjust to taste for sweetness)

1 teaspoon pure vanilla extract

½ cup Greek yogurt (optional - for an extra creamy finish)

A pinch of salt

½ cup finely chopped dark chocolate or chocolate chips (optional, for a delightful swirl)

Instructions
 

Prepare the Orange Juice: Start by squeezing fresh oranges until you have 1 cup of juice. Remember to zest two of the oranges before juicing them—this will enhance the flavor profile of your bars.

    Mix the Base: In a large mixing bowl, combine the fresh orange juice, orange zest, coconut milk, honey or maple syrup, vanilla extract, Greek yogurt (if using), and a pinch of salt. Whisk vigorously until the mixture is smooth and fully combined.

      Taste Test: Take a quick taste of the mixture. Adjust the sweetness according to your preference by adding more honey or maple syrup if needed.

        Incorporate Chocolate (Optional): If you are using chocolate for swirls, gently fold in the finely chopped dark chocolate or chocolate chips at this stage. This will create delightful bursts of chocolate in every bite!

          Pour into Molds: Carefully pour the citrus mixture into your popsicle molds, filling each one about three-quarters full to allow room for expansion during freezing.

            Insert Sticks: If your molds come with sticks, insert them into the center of each filled mold. Make sure they are stable and centered.

              Freeze: Transfer the molds to the freezer and allow them to freeze for a minimum of 4-6 hours, or until completely solid.

                Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds until they loosen. Gently pull out the bars and serve immediately, or place them in a zip-top bag for storage in the freezer—these treats will keep well for up to two weeks.
