2 ripe bananas

2 cups fresh or frozen pineapple chunks

1 cup coconut milk (either canned or from a carton)

2 tablespoons honey or maple syrup (to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional toppings: shredded coconut, chopped nuts, or mini chocolate chips

Instructions
 

Prepare the Fruit: If you're using fresh pineapple, begin by peeling, coring, and cutting the fruit into bite-sized chunks. For frozen pineapple, let it thaw slightly to make blending easier.

    Blend the Mixture: In your blender or food processor, add the ripe bananas, pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and salt. Blend everything on high until you achieve a smooth and creamy consistency, taking the time to scrape down the sides of the container as needed.

      Taste and Adjust: Take a moment to taste your mixture. If you prefer it sweeter, feel free to add a little more honey or syrup, then blend briefly to ensure everything is well combined.

        Pour into Molds: Carefully pour the blended fruit mixture into popsicle molds, making sure to leave a small gap at the top to allow for expansion during freezing.

          Insert Sticks: If your popsicle molds come with sticks, insert them into the mixture now. For traditional cups, wait about 1-2 hours once they’re in the freezer—just until the mixture is firm enough to hold the sticks standing upright.

            Freeze: Place the filled molds into the freezer and allow them to freeze for a minimum of 4-6 hours, or until the pops are completely solid.

              Unmold and Enjoy: When you’re ready to enjoy your pops, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull the pops out. For a decorative touch, you can roll them in shredded coconut, sprinkle with chopped nuts, or add a few mini chocolate chips before serving.
