Frozen Raspberry Yogurt Dots

Ingredients
  

2 cups plain Greek yogurt (feel free to use your favorite type of yogurt)

1 cup fresh raspberries (frozen raspberries are also an option)

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

A pinch of salt

Optional: finely chopped fresh mint for garnish

Instructions
 

Prepare the Raspberries:

    - If you’re using fresh raspberries, rinse them gently under cool running water to remove any dirt, then pat them dry with a clean paper towel.

      - If opting for frozen raspberries, you can either allow them to thaw for a while or use them directly straight from the freezer for an extra icy texture.

        Blend the Mixture:

          - In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt.

            - Using a whisk, mix well until the ingredients are completely blended and the mixture is smooth and creamy.

              Fold in Raspberries:

                - Carefully fold the raspberries into the yogurt mixture with a spatula.

                  - Take care to keep some raspberries intact for delightful bursts of flavor and texture in each bite.

                    Scoop into a Tray:

                      - Line a baking sheet or flat tray with parchment paper to prevent sticking.

                        - Using a small cookie scoop or a spoon, drop dollops of the yogurt mixture onto the prepared tray. Ensure that the dollops are about an inch apart to allow for even freezing.

                          Freeze:

                            - Transfer the tray to the freezer and let it sit undisturbed for approximately 2 to 4 hours, or until the yogurt dots are completely frozen solid.

                              Serve:

                                - Once the dots are frozen, take the tray out of the freezer.

                                  - Use a spatula to gently lift the dots off the parchment paper. If you like, sprinkle finely chopped mint over the dots for an added refreshing touch before serving.

                                    Store:

                                      - Any leftovers can be kept in an airtight container in the freezer, where they will last up to one month.
