2 cups fresh strawberries, hulled and sliced

1 cup coconut milk (use either canned or carton, unsweetened)

2 tablespoons maple syrup (or substitute with honey)

1 teaspoon vanilla extract

1/4 cup chia seeds

1/2 cup unsweetened shredded coconut (optional, for added texture)

Pinch of salt

Prepare the Strawberries: In a blender or food processor, place the sliced strawberries along with the coconut milk, maple syrup, vanilla extract, and a pinch of salt. Blend on high speed until the mixture is completely smooth and creamy.

    Mix in Chia Seeds: Pour the strawberry-coconut blend into a mixing bowl. Add in the chia seeds and stir thoroughly to ensure they are evenly distributed throughout the mixture. Allow it to rest for about 5-10 minutes; this will give the chia seeds time to absorb liquid and thicken the mixture.

      Add Shredded Coconut (Optional): If you opt for textured pops, gently fold the unsweetened shredded coconut into the mixture. This will enhance both the flavor and the chewiness of the pops.

        Fill the Molds: Carefully spoon the mixture into popsicle molds, filling each mold approximately three-quarters full to accommodate any expansion as they freeze. For a visually appealing layered effect, freeze the first layer for about 30 minutes before adding more of the mixture.

          Insert Sticks: After filling the molds, insert the popsicle sticks, making sure they are positioned centrally within each mold.

            Freeze the Pops: Place the molds in the freezer and allow them to freeze firmly for at least 4-6 hours, or until they are completely solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to free the pops.
