Frozen Watermelon Kiwi Pops

4 cups seedless watermelon, cubed

2 ripe kiwis, peeled and sliced

1 tablespoon honey (optional, for added sweetness)

1 tablespoon fresh lime juice

1/2 cup coconut water (or regular water)

Pinch of sea salt

Instructions
 

Blend the Watermelon: In a high-speed blender, combine the cubed watermelon. Blend until the mixture is completely smooth and free of lumps. If you desire a sweeter flavor, add honey to taste. Next, incorporate the fresh lime juice and a pinch of sea salt, blending again to ensure all ingredients are well combined.

    Prepare the Kiwi Layer: In a medium-sized bowl, mash the kiwi slices thoroughly using a fork or potato masher until you achieve a creamy consistency. To enhance the texture, stir in a splash of coconut water, which will help make the kiwi layer smoother and add additional flavor.

      Layer the Pops: Begin by pouring half of the blended watermelon mixture into your popsicle molds, filling each mold about halfway. Then, using a spoon, carefully dollop the kiwi puree on top of the watermelon layer. Finish by pouring the remaining watermelon mixture over the kiwi, filling each mold to the brim.

        Insert the Sticks: Gently insert popsicle sticks into the center of each mold, ensuring that they are upright and not touching the sides to avoid leakage.

          Freeze the Pops: Place the filled popsicle molds in the freezer and allow them to set for a minimum of 4 to 6 hours, or until they are completely frozen solid.
