2 ripe bananas

2 cups plain Greek yogurt (you can also use your favorite flavored yogurt for a twist)

1/2 cup finely chopped walnuts

2 tablespoons honey or maple syrup (optional, for added sweetness)

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon (optional)

8 whole grain or almond flour cookies (these can be store-bought or homemade)

Optional toppings: chocolate chips or extra chopped walnuts for garnish

Prepare the Yogurt Mixture: In a medium mixing bowl, add the Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon (if using). Stir vigorously until the mixture is completely blended and smooth in texture.

    Slice the Bananas: Peel both bananas and cut them into 1/4-inch thick rounds. You will need approximately 16 slices in total to assemble 4 sandwiches.

      Assemble the Sandwiches: Take 4 cookies and place them on a clean, flat surface. Using a spoon or spatula, generously spread a layer of the yogurt mixture over each cookie, ensuring it's thick and evenly distributed.

        Add Bananas and Walnuts: On top of the yogurt layer on each cookie, arrange 2-3 banana slices. Sprinkle a portion of the finely chopped walnuts over the banana slices for added crunch. If desired, sprinkle a few chocolate chips for an indulgent touch.

          Top it Off: Take another cookie and gently press it down onto each stacked cookie, creating a sandwich. Be careful to apply even pressure so the layers adhere well.

            Freeze: Line a baking sheet with parchment paper and carefully place the assembled sandwiches onto it. Transfer the baking sheet to the freezer and allow the sandwiches to freeze for at least 2 to 4 hours, or until the yogurt filling is completely firm.

              Serve: When you're ready to enjoy your treats, remove the sandwiches from the freezer and let them sit at room temperature for a few minutes. This will help soften them slightly for easier biting. Delight in the refreshing combination of flavors!
