2 cups Greek yogurt (choose plain or vanilla for a hint of sweetness)

2 tablespoons unsweetened cocoa powder

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon pure vanilla extract

1/2 cup almonds, finely chopped (for added crunch and flavor)

1/4 cup mini chocolate chips (for extra chocolatey goodness)

1/4 cup brewed espresso or strong coffee, cooled to room temperature

A pinch of salt (to enhance flavors)

Instructions
 

In a medium mixing bowl, combine the Greek yogurt with the unsweetened cocoa powder, honey (or maple syrup), vanilla extract, cooled brewed espresso, and a pinch of salt. Whisk vigorously until the mixture becomes smooth and all the ingredients are fully incorporated.

    Gently fold in the finely chopped almonds and mini chocolate chips. Use a spatula to ensure that the nuts and chocolate are evenly dispersed throughout the yogurt mixture without deflating it.

      Prepare a baking tray or a flat dish by lining it with parchment paper. Using a spoon or a small cookie scoop, portion out the yogurt mixture and drop it onto the prepared tray, forming round disks roughly 1-inch apart. Aim for equal sizes for even freezing.

        Once you've formed all the rounds, transfer the tray to the freezer. Allow them to freeze for at least 4 hours or until the yogurt rounds are solid and firm to the touch.
