3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup graham cracker crumbs

For the Frozen Yogurt Layer:

2 cups vanilla yogurt (can use Greek or regular)

1/2 cup mini marshmallows

1/4 cup crushed graham crackers (for topping)

For the Drizzle:

1/4 cup semi-sweet chocolate chips, for melting

1/4 cup mini marshmallows, for sprinkling

Preheat Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by lining it with parchment paper, allowing some overhang for easier removal of the bars later.

    Make the Cookie Dough: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes. Beat in the egg and vanilla extract, mixing until everything is well blended.

      Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Gradually mix this dry ingredient blend into the butter mixture. Stir until just combined, ensuring not to overmix. Gently fold in the chocolate chips and graham cracker crumbs for that extra crunch.

        Bake the Cookie Base: Press two-thirds of the cookie dough firmly into the prepared baking pan, creating an even layer. Reserve the remaining dough to use later. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden and the center is set. Once baked, allow the cookie base to cool completely in the pan.

          Prepare the Frozen Yogurt Layer: While the cookie base cools, take a mixing bowl and combine the vanilla yogurt with mini marshmallows, stirring until evenly mixed. Once the cookie base is cool, spread the yogurt mixture evenly across the top of it.

            Add the Top Layer: Crumble the reserved cookie dough over the yogurt layer. It’s perfectly okay if some yogurt shows through; this will add to the visual appeal.

              Sprinkle Toppings: Evenly sprinkle crushed graham crackers and the remaining mini marshmallows over the top crumbled layer for added texture and sweetness.

                Freeze: Cover the baking pan with plastic wrap and place it in the freezer. Allow it to freeze for at least 4 hours, or until the yogurt is thoroughly firm.

                  Prepare Chocolate Drizzle: In a microwave-safe bowl, melt the 1/4 cup chocolate chips, heating in 30-second intervals and stirring each time until smooth and fully melted.

                    Serve: Once frozen, use the parchment overhang to lift the bars out of the pan. Cut them into squares for serving. Just before enjoying, drizzle the melted chocolate over the bars for that delicious finish.
