Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and quartered

1 cup fresh kiwi, peeled and sliced

1/4 cup lemon juice

Zest of 1 lemon

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Strawberries and Kiwis:

    - In a medium-sized bowl, combine the quartered strawberries and sliced kiwis. Drizzle half of the lemon juice over the fruit and gently toss to coat. Let the mixture sit for 10 minutes to marinate, allowing the flavors to meld beautifully.

      Make the Yogurt Mixture:

        - In a large mixing bowl, whisk together the plain Greek yogurt, honey (or maple syrup), vanilla extract, lemon zest, and a pinch of salt. Continue whisking until the mixture is smooth and completely combined. Taste and adjust the sweetness according to your preference.

          Layer the Mixture:

            - Using a silicone mold or an ice cube tray for a fun wedge shape, spoon a layer of the yogurt mixture into each compartment, filling them about 1/4 full. This will create a creamy base for the fruity layers.

              Add the Fruits:

                - Spoon the marinated strawberries and kiwis over the yogurt base to form the next layer. Press down gently on the fruit pieces to ensure they are slightly embedded in the yogurt.

                  Fill It Up:

                    - Pour the remaining yogurt mixture over the fruit layers until just below the top of each compartment. If you like, use a toothpick or skewer to swirl the top layer gently, creating a beautiful marbled effect.

                      Freeze:

                        - Transfer the mold to the freezer and let it chill for at least 4-6 hours, or until the wedges are completely frozen solid.

                          Serve:

                            - Once frozen, carefully remove the wedges from the mold by gently pressing from the bottom. If they are stubborn, allow them to sit at room temperature for about a minute before releasing.

                              - Garnish with fresh mint leaves for an added touch of freshness and enjoy your delightful frozen treat!
