Ingredients

1 lb (450g) sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: lemon wedges (for a zesty finish)

Instructions

Prepare the Steak: Begin by patting the steak cubes dry with a paper towel. This will enhance the sear. Season the cubes generously with salt, black pepper, and smoked paprika, ensuring they are evenly coated for maximum flavor.

Heat the Pan: In a large cast iron skillet, melt 2 tablespoons of unsalted butter over medium-high heat until it becomes hot and begins to foam. This indicates that the butter is ready for cooking.

Cook the Steak: Carefully add the seasoned steak cubes to the skillet in a single layer. If the skillet is crowded, consider cooking the steak in batches for an even sear. Sear the steak for about 2-3 minutes on each side, or until a rich, golden crust forms and the steak reaches your preferred doneness (medium-rare is about 130°F/54°C). Once cooked, transfer the steak bites to a plate and set aside.

Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium. Place the remaining 2 tablespoons of butter into the pan. After it melts, add in the minced garlic and thyme leaves. Sauté the mixture for about 1-2 minutes, stirring frequently, until the garlic becomes fragrant and golden, taking care to avoid burning it.

Combine: Return the seared steak bites to the skillet, tossing them in the luscious garlic butter sauce until they are well-coated. Allow everything to cook together for an additional minute to meld the flavors.

Serve: Remove the skillet from heat. Garnish the steak bites with freshly chopped parsley for a pop of color and serve immediately. For a refreshing contrast, include lemon wedges on the side for an added zing.
