Ingredients

1 lb ground turkey

1/2 cup whole wheat breadcrumbs

1/4 cup freshly grated Parmesan cheese

1/2 cup finely chopped onion

1 garlic clove, minced

1/2 cup milk (or your preferred dairy-free alternative)

1 large egg

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp dried thyme

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

1/4 cup ketchup (for topping)

1 tbsp brown sugar (optional, for a touch of sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that your oven is at the perfect temperature for cooking the meatloaf minis evenly.

Sauté the Vegetables: In a small skillet, pour in a splash of olive oil and heat it over medium heat. Add the finely chopped onion and sauté for approximately 5 minutes, or until the onions become translucent and soft. Then, add the minced garlic and cook for an additional minute, stirring frequently, until fragrant. Remove from heat and allow to cool slightly.

Combine Ingredients: In a large mixing bowl, add the ground turkey, the sautéed onion and garlic mixture, breadcrumbs, grated Parmesan cheese, milk, the egg, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and pepper. Mix thoroughly using your hands or a spatula until everything is well combined and the mixture is cohesive.

Shape the Minis: Prepare a muffin tin by spraying it with non-stick spray or lining it with paper liners. Scoop the turkey mixture into each muffin cup, filling them about three-quarters full to allow room for rising during baking. Press the mixture down gently to ensure they hold their shape while cooking.

Prepare the Topping: In a small bowl, combine the ketchup with brown sugar (if you choose to use it) and mix until smooth. Spoon a small amount of this blend onto the top of each meatloaf mini, providing a delicious sweet and tangy glaze.

Bake: Place the filled muffin tin into your preheated oven and bake for 20-25 minutes. The meatloaf minis are done when they are cooked through and have a lovely golden brown top. To check for doneness, ensure an internal thermometer reads 165°F (74°C).

Rest and Serve: Once baked, carefully remove the muffin tin from the oven and allow the meatloaf minis to rest for about 5 minutes. Gently take them out of the tin and serve warm. They pair wonderfully with sides like creamy mashed potatoes or a crisp garden salad.

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 minis

                  - Presentation Tips: For a delightful presentation, arrange the meatloaf minis on a platter garnished with fresh parsley or chives for a pop of color. Consider serving with a small bowl of extra ketchup on the side for dipping.
