Grilled Chicken Pesto Wraps

2 boneless, skinless chicken breasts

1 cup fresh basil pesto (store-bought or homemade)

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 medium red bell pepper, sliced into thin strips

1 medium cucumber, thinly sliced

1 cup shredded mozzarella cheese

1 tablespoon olive oil

Salt and pepper to taste

Optional: lemon wedges for garnish

Prepare the Chicken: Begin by seasoning the chicken breasts generously with salt and pepper. Drizzle a tablespoon of olive oil over the chicken to enhance flavor and prevent sticking. Preheat your grill or grill pan to medium-high heat.

    Grill the Chicken: Once the grill is steaming hot, place the seasoned chicken breasts on it. Grill for approximately 6-7 minutes per side, ensuring they are fully cooked and the juices run clear. The internal temperature should reach 165°F (74°C). After grilling, remove the chicken from the heat and let it rest for about 5 minutes to retain its juices.

      Slice the Chicken: After resting, slice the grilled chicken into thin strips, which will make it easier to layer in your wraps.

        Assemble the Wraps: Lay each whole wheat tortilla flat on a clean surface. Spread approximately 2 tablespoons of pesto evenly over each tortilla, leaving a small border around the edges to avoid spillage.

          Add Fillings: On top of the pesto layer, create a colorful arrangement with fresh spinach leaves, sliced red bell pepper, thinly sliced cucumber, and a generous handful of shredded mozzarella cheese. Finally, add the grilled chicken strips over the top.
