4 slices of whole grain bread

4 oz. sliced turkey or chicken breast

4 oz. sharp cheddar cheese, sliced

1/2 cup baby spinach leaves

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon extra virgin olive oil

Salt and freshly cracked pepper, to taste

Optional: 1/4 cup sliced pickles for added crunch

Prepare the Spread: In a small mixing bowl, combine the mayonnaise and Dijon mustard, stirring until the mixture is smooth and cohesive. Taste the spread and adjust seasoning with salt and freshly cracked pepper as desired. Set the bowl aside to let the flavors meld.

    Assemble the Sandwiches: On a clean work surface, place two slices of whole grain bread. Generously spread the mayo-mustard mixture onto the top surface of each slice. On one slice, layer half of the sliced turkey or chicken evenly, followed by a slice of sharp cheddar cheese, and a handful of baby spinach. If you’re using pickles for that extra crunch, now is the time to add them. Top with another slice of bread, mayo side down.
