Grilled Veggie Quesadillas

4 large whole wheat tortillas

1 bell pepper (red or yellow), diced into bite-sized pieces

1 medium zucchini, sliced into thin rounds

1 cup fresh mushrooms, sliced

1 cup fresh spinach leaves, roughly chopped

1 small red onion, thinly sliced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

Optional toppings: salsa, guacamole, Greek yogurt, or sour cream for serving

Prepare the Vegetables: In a large mixing bowl, combine the diced bell pepper, zucchini rounds, sliced mushrooms, chopped spinach, and thinly sliced red onion. Drizzle with the olive oil, then sprinkle with garlic powder, ground cumin, salt, and pepper. Toss all the ingredients together until the vegetables are well-coated with the oil and seasonings.

    Sauté the Vegetables: Preheat a grill pan or non-stick skillet over medium heat. Once hot, add the seasoned vegetable mixture. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender and display slight charring. Remove the pan from heat and set the sautéed vegetables aside.

      Assemble the Quesadillas: Take one tortilla and lay it flat on a clean surface. On one half of the tortilla, spread a layer of shredded mozzarella and cheddar cheese. On top of the cheese, add a generous portion of the sautéed vegetable mixture. Sprinkle a little more cheese on top of the vegetables to help bind the quesadilla together. Carefully fold the tortilla in half, covering the filling.

        Grill the Quesadillas: Wipe the grill pan lightly with olive oil if necessary. Place the folded quesadilla into the pan. Grill for approximately 3-4 minutes, or until the bottom is golden brown and crispy. Flip the quesadilla and cook for another 3-4 minutes on the opposite side, ensuring the cheese melts thoroughly.

          Repeat the Process: Continue the assembly and grilling process with the remaining tortillas and vegetable filling until you have grilled all the quesadillas.

            Slice and Serve: Once all quesadillas are grilled to a perfect golden crisp, remove them from the pan and let them cool for a minute. Slice each quesadilla into wedges and serve warm, accompanied by salsa, guacamole, and your choice of toppings for a delicious touch.
