Ingredients

2 cups cooked shredded chicken

1 can (15 oz) Hatch green chili enchilada sauce

1 can (10 oz) diced tomatoes with green chilies, drained

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 bag (10-12 oz) tortilla chips

1/2 cup sliced black olives (optional)

1/4 cup fresh cilantro, chopped

1 avocado, diced (for topping)

1 lime, cut into wedges (for serving)

Salt and pepper to taste

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C), ensuring it reaches the right temperature for even baking.

Prepare Chicken Mixture: In a large mixing bowl, combine the cooked shredded chicken with the Hatch green chili enchilada sauce, drained diced tomatoes, black beans, corn, and half of each type of cheese (both cheddar and Monterey Jack). Season this mixture generously with salt and pepper. Mix all the ingredients thoroughly until well incorporated.

Layering: Take a large baking dish, approximately 9x13 inches in size, and create a bed of tortilla chips on the bottom. Use about half of the chips in a single layer. Spoon half of the chicken mixture evenly over this layer of chips. Follow with another layer of tortilla chips, then add the remaining chicken mixture on top. Finish with a final layer of the remaining tortilla chips for maximum crunch.

Cheese Topping: Generously sprinkle the remaining cheddar and Monterey Jack cheese over the top layer of chips. If you're using black olives, scatter them on top for an extra burst of flavor.

Bake: Cover the baking dish with aluminum foil and place it in your preheated oven. Bake covered for about 25 minutes, then carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden brown.

Garnish and Serve: Once out of the oven, let your nacho bake cool for a few minutes to set. Just before serving, garnish with fresh chopped cilantro and diced avocado on top. Serve with lime wedges on the side to add a zesty flavor burst.

Enjoy: Dish out the delicious Spicy Hatch Chili Chicken Nacho Bake hot, and enjoy it with family and friends for a perfect gathering dish!
