Ingredients

1 lb ground turkey

2 cups Hatch green chilies, chopped (fresh or roasted)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

8 medium flour tortillas

¼ cup fresh cilantro, finely chopped

Salsa and sour cream for serving (optional)

Instructions

Cook the Ground Turkey: In a large skillet set over medium heat, add the ground turkey. Use a wooden spoon to break it apart as it cooks. Sauté for about 5-7 minutes or until the turkey is browned and no longer pink. If there is excess fat, drain it off carefully.

Incorporate the Seasonings and Chilies: Once the turkey is cooked, add the garlic powder, onion powder, ground cumin, smoked paprika, salt, black pepper, and the chopped Hatch green chilies. Stir everything together, cooking for another 3-4 minutes or until the chilies are warm and fragrant.

Prepare the Tortilla Wrappers: On a clean workspace, lay out the tortillas. Spoon an equal amount of the turkey and chili mixture into the center of each tortilla. Top generously with both the Monterey Jack and sharp cheddar cheeses.

Fold and Secure the Tortillas: Carefully fold in the sides of each tortilla over the filling, then roll tightly from the bottom to form a neat wrap. If needed, secure each tortilla with toothpicks to hold the shape.

Grill the Tortilla Melts: Return the same skillet to the heat and drizzle a bit of olive oil, heating over medium. Once hot, place the tortilla wraps seam-side down in the skillet. Let them cook for 3-4 minutes or until they turn a lovely golden brown. Flip them gently to cook for another 3-4 minutes on the opposite side until crispy and the cheese inside has melted.

Slice and Garnish: Remove the tortilla melts from the skillet and allow them to cool slightly. Slice each one in half and sprinkle with freshly chopped cilantro. Serve on a platter with salsa and sour cream for dipping.

Optional Presentation Tips: Arrange the tortilla melts on a colorful platter with a small bowl of salsa and sour cream in the center. Consider adding lime wedges and additional cilantro for a fresh touch.
