1 pound ground beef (or blend half ground beef and half ground pork for richer flavor)

1 cup whole wheat breadcrumbs (for added texture)

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

1/2 cup green bell pepper, finely chopped

2 cloves garlic, minced

1/2 cup milk

1 large egg

2 tablespoons Worcestershire sauce

2 tablespoons ketchup (plus extra for topping)

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

For the Mashed Cauliflower:

1 medium head of cauliflower, cut into florets

1/4 cup cream cheese (or Greek yogurt for a healthier option)

1/4 cup milk

2 tablespoons butter

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Meatloaf Mixture:

    - Begin by preheating your oven to 350°F (175°C).

      - In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, finely chopped onion, green bell pepper, minced garlic, milk, egg, Worcestershire sauce, ketchup, Dijon mustard, dried thyme, salt, black pepper, and smoked paprika.

        - Use your hands or a spatula to mix the ingredients thoroughly until everything is well incorporated.

          Shape and Bake:

            - Transfer the meat mixture into a loaf pan, pressing it down gently to shape it into a loaf. Alternatively, you can shape it by hand and lay it on a parchment-lined baking sheet for a rustic look.

              - Spread a thin layer of ketchup on top of the meatloaf to enhance flavor and keep it moist.

                      - Once tender, drain the cauliflower well and transfer it to a food processor. Add in the cream cheese, milk, butter, salt, and pepper.

                        - Blend the mixture until it reaches a smooth, creamy consistency. Taste and adjust the seasoning as needed.

                          Serve:
