Ingredients

4 skin-on salmon fillets

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

Zest of 1 large lemon

2 tablespoons fresh lemon juice

2 tablespoons fresh dill, finely chopped (or 2 teaspoons dried dill)

3 cloves garlic, minced

Salt and pepper, to taste

Lemon wedges and extra dill for garnish (optional)

Instructions

Prep the Asparagus:

Preheat your oven to 400°F (200°C). While the oven is heating up, arrange the trimmed asparagus on a large baking sheet. Drizzle with 1 tablespoon of olive oil, then sprinkle generously with salt and pepper. Toss the asparagus gently to ensure they are evenly coated in the oil and seasoning.

      Prepare the Marinade:

In a small bowl, combine the remaining 2 tablespoons of olive oil, the lemon zest, fresh lemon juice, minced garlic, and chopped dill. Season with salt and pepper to taste. Whisk all the ingredients together well; this mixture will serve as a flavorful marinade for the salmon.

          Marinate the Salmon:

Place the salmon fillets skin-side down on the same baking sheet with the asparagus. Using a brush or spoon, generously apply the lemon dill marinade over the tops of each salmon fillet, allowing it to soak into the fish for a few minutes while the oven finishes preheating.

              Roast in the Oven:

Once the oven has reached the desired temperature, place the tray in the oven and roast for about 12-15 minutes. Keep an eye on the salmon; it is cooked through when it flakes easily with a fork and has reached an internal temperature of 145°F (63°C). The asparagus should be tender yet still crisp.

                  Serve:

Carefully extract the baking sheet from the oven. To serve, plate the salmon alongside the roasted asparagus. For a pop of color and extra flavor, garnish each plate with fresh lemon wedges and a sprinkle of additional dill, if desired.

                      Enjoy!
