1 teaspoon cumin powder

1 teaspoon smoked paprika

2 tablespoons olive oil

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Salsa and sour cream (for serving)

Prepare the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the finely chopped red onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

    Add the Vegetables: Incorporate the diced red bell pepper, grated zucchini, corn kernels, and black beans into the skillet. Season the mixture with cumin powder, smoked paprika, salt, and pepper. Stir well to combine and continue cooking for an additional 5-7 minutes, or until the vegetables are tender and heated through.

      Assemble the Quesadillas: In a separate large skillet, heat over medium heat. Place one tortilla in the skillet and sprinkle a generous amount of shredded cheddar cheese on one half.
