2 large sweet potatoes, peeled and diced

6 slices of thick-cut bacon, chopped

4 large eggs

1 cup milk (or almond milk for a dairy-free alternative)

1/4 cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and pepper to taste

1/2 cup shredded sharp cheddar cheese (optional)

2 tablespoons fresh chives, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's hot enough for baking.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to absorb excess grease, leaving about 1-2 tablespoons of bacon fat in the skillet.

      Sauté Sweet Potatoes: In the same skillet with the reserved bacon fat, add the diced sweet potatoes. Season them with salt and pepper. Sauté over medium heat for 10-12 minutes, stirring occasionally, until they are tender and have a nice caramelized color. Remove from heat and set aside.

        Prepare the Egg Mixture: In a large bowl, vigorously whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and nutmeg until fully combined and slightly frothy.

          Combine Ingredients: Grease a 9x13-inch baking dish with cooking spray or butter. Spread the sautéed sweet potatoes evenly across the bottom of the dish. Evenly sprinkle the cooked bacon over the sweet potatoes. If desired, add shredded cheddar cheese on top for added richness.
