2 medium-sized acorn squash

4 tablespoons unsalted butter, melted

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 cup chopped pecans (optional, for topping)

Fresh thyme or parsley, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C). To make clean-up a breeze, line a large baking sheet with parchment paper, ensuring that the squash won’t stick during roasting.

    Carefully slice each acorn squash in half vertically. Use a spoon to scoop out the seeds and any stringy pulp. Next, cut the squash into 1-inch thick half-moons to ensure even roasting throughout.

      In a mixing bowl, whisk together the melted butter, maple syrup, ground cinnamon, ground nutmeg, salt, and black pepper until you achieve a smooth and well-combined mixture.

        Arrange the acorn squash slices on the prepared baking sheet. Using a pastry brush, generously coat both sides of each slice with the maple glaze, reserving some of the mixture for later application.

          Position the squash with the cut side facing down on the baking sheet. Roast them in the preheated oven for 25 minutes, allowing the natural sugars to start caramelizing.

            After 25 minutes, carefully remove the baking sheet from the oven and flip each piece over. Brush the freshly exposed cut sides with the remaining maple glaze for extra flavor.

              Return the baking sheet to the oven and continue roasting for an additional 15 to 20 minutes, or until the squash is tender and beautifully caramelized.

                If you’re opting to use pecans, sprinkle the chopped nuts over the squash in the last 5 minutes of cooking to toast them lightly, enhancing their flavor and crunch.
