4 salmon fillets (6 oz each)

1/4 cup pure maple syrup

2 tablespoons low-sodium soy sauce

1 tablespoon Dijon mustard

1 tablespoon olive oil

2 cloves garlic, minced

Freshly ground black pepper, to taste

Lemon wedges, for serving

For the Pear Relish:

2 ripe pears, peeled, cored, and diced

1/4 cup red onion, finely chopped

1/4 cup fresh cranberries, roughly chopped

1 tablespoon honey or extra maple syrup

1 tablespoon apple cider vinegar

1 tablespoon fresh mint, finely chopped

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, and a generous amount of freshly ground black pepper until well combined. Reserve about 2 tablespoons of this marinade for basting the salmon later.

    Marinate the Salmon: Place the salmon fillets into a shallow dish or a resealable plastic bag and pour the marinade over them, ensuring that each fillet is thoroughly coated. Cover the dish with plastic wrap or seal the bag and let the salmon marinate in the refrigerator for 30 minutes to 1 hour for optimal flavor.
