2 cups cooked, shredded chicken

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (can be fresh, frozen, or canned)

1 cup salsa (choose mild or spicy based on your preference)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cooked rice (use white or brown)

1 cup shredded cheddar cheese (or a Mexican cheese blend)

1 cup tortillas, cut into strips or quartered

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Avocado slices (optional, for serving)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) so it warms up while you prepare the other ingredients.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, ground cumin, chili powder, garlic powder, onion powder, and cooked rice. Gently stir the mixture until all the ingredients are evenly incorporated.

      Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil. Spread half of the tortilla strips evenly across the bottom of the dish to form a base layer.

        Add the Filling: Pour the chicken and bean mixture over the layer of tortilla strips. Use a spatula to spread it out evenly, ensuring it covers the tortillas completely.
