1 package of wonton wrappers (approximately 48 wrappers)

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 cup fresh spinach, finely chopped

1/2 cup red bell pepper, finely diced

1/2 cup zucchini, grated

1/4 cup green onions, chopped

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray or 2 tablespoons olive oil for brushing

Optional: Additional shredded cheese for topping

Preheat the Oven: Set your oven to preheat at 375°F (190°C), ensuring it reaches the desired temperature before you begin baking.

    Prepare the Wonton Wrappers: Lightly spray a standard muffin tin with olive oil to prevent sticking. Gently press each wonton wrapper into the muffin cups, aiming for a snug fit. Ensure the edges of the wrappers are also coated with a light layer of olive oil or brush them with olive oil for added crispiness.

      Mix the Filling: In a large mixing bowl, combine the shredded mozzarella, ricotta cheese, chopped spinach, diced red bell pepper, grated zucchini, chopped green onions, minced garlic, dried oregano, salt, and black pepper. Stir thoroughly until all ingredients are evenly blended.

        Fill the Cups: Using a spoon, generously fill each wonton cup with the veggie and cheese mixture, stopping approximately three-quarters full to allow for expansion. If desired, sprinkle a little extra shredded cheese over the top of the filling for a delightful cheesy crust.

          Bake: Carefully transfer the muffin tin to the preheated oven. Bake for about 15 to 20 minutes, or until the edges of the wonton wrappers are golden brown and the cheese filling is bubbly and melted.
