Ingredients

For the Chicken Filling:

1 lb (450g) ground chicken

1/2 cup buffalo sauce (can be store-bought or homemade)

1/4 cup cream cheese, softened to room temperature

1/4 cup shredded cheddar cheese

1/4 cup diced green onions (scallions)

1 teaspoon garlic powder

Salt and pepper, to taste

For the Wonton Tacos:

24 wonton wrappers

2 cups vegetable oil (for frying)

For Serving:

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup crumbled blue cheese

Extra buffalo sauce (for drizzling)

Optional: fresh cilantro or parsley for garnish

Instructions

Prepare the Chicken Filling:

    - In a medium mixing bowl, thoroughly combine the ground chicken, buffalo sauce, softened cream cheese, shredded cheddar cheese, diced green onions, garlic powder, and a sprinkle of salt and pepper. Mix well until the ingredients are evenly incorporated.

      Cook the Chicken Filling:

        - Heat a skillet over medium heat. Add the chicken mixture and cook for approximately 5-7 minutes, or until the chicken is fully cooked and no longer pink, stirring frequently. Make sure the cream cheese melts into the mixture, creating a creamy texture. After cooking, remove from heat and allow to cool slightly.

          Shape the Wonton Tacos:

            - Preheat the vegetable oil in a deep pan or deep fryer to 350°F (175°C).

              - Once the oil is heating, take a wonton wrapper and lay it in your hand. Spoon about 1 tablespoon of the chicken filling into the center of the wrapper.

                - Fold the wrapper in half to form a triangle. Pinch the edges securely to seal the filling inside. Alternatively, for a taco shape, place the filled triangle into a small taco mold or gently bend it.

                  Fry the Wonton Tacos:

                    - When the oil is hot, carefully add the wonton tacos, ensuring not to overcrowd the pan. Fry each taco for about 3-4 minutes, or until they turn golden brown and crispy.

                      - Using a slotted spoon, transfer the fried tacos to a plate lined with paper towels to absorb any excess oil.

                        Assemble the Tacos:

                          - Once the wonton tacos have cooled for a few moments, fill each one with a handful of shredded lettuce, followed by diced tomatoes and a generous sprinkle of crumbled blue cheese.

                            - Drizzle additional buffalo sauce over the assembled tacos. If desired, garnish with freshly chopped cilantro or parsley for a pop of color.

                              Serve and Enjoy:

                                - Arrange the mini chicken buffalo wonton tacos on a vibrant platter. Serve immediately while they are still crispy, alongside extra buffalo sauce for dipping!
