Mini Chicken Teriyaki Lettuce Wraps

1 lb ground chicken

2 tablespoons soy sauce

1 tablespoon teriyaki sauce

1 tablespoon sesame oil

1 teaspoon fresh ginger, minced

2 cloves garlic, minced

1/4 cup green onions, thinly sliced (plus more for garnish)

1/4 cup shredded carrots

1/4 cup water chestnuts, diced

1 tablespoon rice vinegar

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves separated

Sesame seeds, for garnish

Cook the Chicken: In a large skillet set over medium heat, add the sesame oil. Once the oil is hot and shimmering, add the ground chicken. Use a spatula to break the chicken apart and cook it, stirring frequently until it is browned and fully cooked, about 5-7 minutes.

    Add Flavor: Once the chicken is cooked through, stir in the minced ginger and garlic. Sauté for an additional 1-2 minutes until both ingredients become fragrant and aromatic.

      Combine Sauces: In a small mixing bowl, whisk together the soy sauce, teriyaki sauce, and rice vinegar until well blended. Pour this sauce mixture over the cooked chicken in the skillet, stirring thoroughly to ensure the chicken is evenly coated. Allow it to cook for another 2-3 minutes until the sauce has thickened slightly.

        Mix in Veggies: Add the sliced green onions, shredded carrots, and diced water chestnuts to the skillet. Mix well to combine all ingredients and heat through. Taste the mixture and season with salt and pepper as needed.
