1 cup cooked quinoa

1 cup grated zucchini (ensure to squeeze out excess moisture)

1 cup canned chickpeas, drained and thoroughly mashed

½ cup finely chopped red bell pepper

½ cup crumbled feta cheese

¼ cup freshly chopped parsley

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and black pepper, to taste

1 cup whole wheat breadcrumbs

1 tablespoon olive oil (for frying)

Mini whole wheat slider buns

Tzatziki sauce (for serving)

Fresh slices of cucumber and tomato (for garnish)

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the cooked quinoa, grated zucchini, mashed chickpeas, chopped red bell pepper, crumbled feta, parsley, dried oregano, garlic powder, ground cumin, and a sprinkle of salt and pepper. Mix thoroughly until all ingredients are evenly combined.

    Form the Patties: Gradually fold in the whole wheat breadcrumbs until the mixture binds together properly. Use your hands to shape the mixture into small patties that match the size of your slider buns. You should be able to form about 12-15 patties.

      Cook the Sliders: Heat the olive oil in a skillet over medium heat. Once the oil is shimmering, add the patties in batches (do not overcrowd the pan) and cook for 3-4 minutes per side until each is golden brown and crispy on the outside.

        Prep the Buns: While the patties are frying, lightly toast the mini whole wheat slider buns in a toaster or on the stovetop until they are just golden and warm.
