Mini Veggie Lasagna Wonton Cups

24 wonton wrappers

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1 cup grated Parmesan cheese

1 cup spinach, chopped (fresh or frozen, thawed and drained)

1 medium zucchini, finely chopped

1 bell pepper, finely chopped (any color you prefer)

1 cup marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper

Olive oil spray for greasing muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's at the right temperature for baking.

    Prepare the Wonton Cups: Lightly spray a standard muffin tin with olive oil to prevent sticking. Take a wonton wrapper and gently press it into each muffin cup, creating a cup shape. Allow the edges to slightly overlap for a finished look.

      Prepare the Veggie Filling: In a mixing bowl, combine the ricotta cheese, ½ cup of the shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, finely chopped zucchini, and bell pepper. Season with dried oregano, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

        Assemble the Cups: Start by spooning approximately 1 tablespoon of marinara sauce into the bottom of each wonton cup. Next, add about 2 tablespoons of the veggie cheese filling on top of the marinara. For a layered effect, repeat by adding another spoonful of marinara sauce followed by another layer of veggie filling. Finish each cup with a generous sprinkle of the remaining mozzarella cheese.

          Bake: Carefully place the muffin tin in the preheated oven. Bake for 15-18 minutes or until the cheese is bubbly and the edges of the wonton wrappers turn a beautiful golden brown.

            Cool and Serve: Allow the mini lasagna cups to cool for about 5 minutes after taking them out of the oven. Gently remove the cups from the muffin tin. Serve warm, garnished with a sprinkle of fresh herbs (such as basil or parsley) or extra marinara sauce on the side for dipping if desired.
