Ingredients

6 small whole wheat tortillas

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1 small bell pepper (any color), diced

1/2 cup corn kernels (fresh or frozen)

1 small zucchini, grated

1/2 cup black beans, rinsed and drained

1 small red onion, finely chopped

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Salsa (for serving)

Instructions

Sauté the Vegetables: In a medium-sized skillet, heat the olive oil over medium heat. Add the finely chopped red onion and diced bell pepper along with the grated zucchini. Sauté these ingredients for about 5 minutes, stirring frequently, until they soften. Next, mix in the corn kernels and black beans, followed by the ground cumin, chili powder, salt, and pepper. Continue cooking for an additional 2-3 minutes until everything is heated through, then remove from heat and set aside.

Prepare the Cheese Mixture: In a mixing bowl, combine the shredded cheddar cheese and crumbled feta cheese, stirring well to ensure an even blend.

Assemble the Quesadillas: Take one tortilla and place it on a clean flat surface or cutting board. Spread a thin layer of the cheese mixture evenly over one half of the tortilla. On top of the cheese, add a generous spoonful of the sautéed veggie mixture. Carefully fold the tortilla in half to create a semi-circle. Repeat this assembly process for the remaining tortillas.

Cook the Quesadillas: Using the same skillet, add a splash of olive oil if needed. Heat the skillet over medium heat and place the assembled quesadillas in the pan. Cook each quesadilla for approximately 2-3 minutes on each side, or until they are golden brown and crispy, with the cheese thoroughly melted.

Cut and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for about a minute before slicing. Cut each quesadilla into triangles and garnish with freshly chopped cilantro. Serve with creamy avocado slices and a side of salsa for a delicious dipping option.
