Ingredients

1 ½ cups rolled oats

1 cup unsweetened shredded coconut

½ cup chopped nuts (cashews or almonds)

½ cup medjool dates, pitted and roughly chopped

½ cup mango puree (fresh or canned)

¼ cup maple syrup or honey

1 teaspoon vanilla extract

½ teaspoon salt

Extra shredded coconut for garnish (optional)

Instructions

Prepare the Base: In a food processor, combine the rolled oats, shredded coconut, chopped nuts, and salt. Pulse the mixture until it’s finely chopped but still retains some texture—avoid turning it into flour.

Add Sweetness: Introduce the pitted and chopped medjool dates, mango puree, maple syrup (or honey), and vanilla extract to the processor. Blend until the mixture becomes sticky and holds together when pressed. If it feels too dry, add a small splash of water or a bit more mango puree to achieve the right consistency.

Press into Pan: Line a 9x9-inch square dish with parchment paper, ensuring there’s an overhang on the sides for easy removal later. Transfer the mango coconut mixture into the lined dish. Use the back of a spatula or your hands to press it down firmly, forming an even and compact layer.

Chill: Cover the dish with plastic wrap and place it in the refrigerator for at least 1-2 hours, or until the mixture is firm to the touch.

Slice and Serve: Once the mixture is set, lift the bars out of the dish using the parchment paper overhang. Cut into squares or rectangles. For an extra tropical flair, roll the edges of the bars in additional shredded coconut before serving.

Enjoy: These delightful bars make for a refreshing snack or dessert. Store any leftovers in an airtight container in the refrigerator, where they’ll stay fresh for up to a week.
