Ingredients

1 cup rolled oats

½ cup almond butter (or your favorite nut/seed butter)

½ cup finely chopped dried peaches

¼ cup honey or maple syrup

½ teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ cup unsweetened shredded coconut

¼ cup chopped nuts (walnuts or pecans work well)

Pinch of sea salt

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, finely chopped dried peaches, unsweetened shredded coconut, chopped nuts, ground cinnamon, and a pinch of salt. Use a spoon to stir well, ensuring all the dry ingredients are evenly mixed.

Combine Wet Ingredients: In a separate bowl, add the almond butter, honey (or maple syrup), and vanilla extract. Mix together using a whisk or spatula until the mixture is smooth and well incorporated.

Combine Wet and Dry: Pour the wet mixture into the bowl containing the dry ingredients. Use a spatula or your hands to mix everything thoroughly. Ensure that the oats and peaches are evenly coated, and the mixture begins to clump together.

Shape the Bites: With clean hands, take about a tablespoon of the mixture and roll it into a ball, roughly 1 inch in diameter. Place each formed bite onto a parchment-lined baking sheet or plate. Continue until all the mixture has been rolled into bites.

Chill and Set: Transfer the baking sheet or plate with the energy bites to the refrigerator. Allow them to chill for at least 30 minutes, which will help them firm up and hold their shape.

Serve and Enjoy: After chilling, your energy bites are ready to enjoy! For storage, keep any leftovers in an airtight container in the refrigerator for up to one week.
