Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter you prefer)

1/3 cup honey (or substitute with maple syrup for a vegan alternative)

1/2 cup mixed nuts (a blend of walnuts, pecans, and cashews, roughly chopped)

1/2 cup dark chocolate chips (or opt for carob chips)

1/4 cup dried cranberries (or you can use raisins)

1/4 cup sunflower seeds

1 teaspoon vanilla extract

A pinch of sea salt

Instructions

Prepare the Dry Ingredients: In a large mixing bowl, thoroughly combine the rolled oats, chopped mixed nuts, sunflower seeds, dried cranberries, and dark chocolate chips. Stir until these ingredients are well dispersed.

Heat the Nut Butter and Sweetener: In a small saucepan over low heat, gently warm the almond butter and honey together. Stir continuously until the mixture becomes smooth and fully blended. If you are using maple syrup, you can skip this step since it does not require heating.

Combine Wet and Dry Ingredients: Once the almond butter and honey mixture is heated, remove the saucepan from the stove. Add the vanilla extract and a pinch of sea salt to this warm mixture, stirring to combine. Pour this liquid mixture over the dry ingredients in the large bowl.

Mix Thoroughly: Using a spatula or wooden spoon, mix the ingredients together diligently. Ensure that all dry ingredients are thoroughly coated with the wet mixture, taking care to incorporate everything without leaving any dry spots.

Shape the Clusters: Prepare a baking sheet by lining it with parchment paper. With your hands, scoop out portions of the mixture and roll them into small balls or flatten them into clusters roughly 1 inch in diameter and place them directly on the parchment.

Chill to Set: Transfer the baking sheet to the refrigerator and allow the clusters to chill for at least 30 minutes. This will help them firm up and set properly.

Serve and Enjoy: After the clusters have chilled and firmed up, they are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to one week for optimal freshness.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 12 clusters

                  - Presentation Tips: For an attractive serving suggestion, arrange the energy clusters on a colorful platter and garnish with a sprinkle of additional chopped nuts or a few fresh berries.
