2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets

1 cup uncooked long-grain or jasmine rice

3 cups chicken broth (low-sodium preferred)

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or your favorite creamy soup)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and black pepper to taste

½ cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare Chicken and Rice: In a large skillet or deep oven-safe pan, heat the olive oil over medium heat. If your chicken is not pre-cooked, add it to the pan and sauté until it turns golden brown, approximately 5-7 minutes. If using pre-cooked chicken, simply proceed to the next step. Add the uncooked rice to the skillet and stir to combine. Sauté for about 2 minutes to lightly toast the rice, enhancing its flavor.

    Add Broccoli and Broth: Next, add the fresh broccoli florets, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, and a sprinkle of salt and black pepper. Stir the mixture well to ensure all ingredients are evenly distributed.

      Simmer the Mixture: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for 15-20 minutes. This will allow the rice to become tender and absorb most of the liquid. Stir occasionally to prevent sticking, ensuring all ingredients meld together.

        Incorporate Cheeses: Once the rice is fully cooked and has absorbed the liquid, remove the lid and gently fold in the shredded cheddar cheese and half of the grated Parmesan cheese. Stir until the cheeses are fully melted and the mixture is creamy and well combined.
