Ingredients

1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese, divided

1 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon salt, or to taste

1 tablespoon olive oil

Optional: 1/4 cup grated Parmesan cheese for topping

Optional: Fresh parsley for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures it’s ready for the casserole when you finish assembling the dish.

Sauté the Vegetables: In a large, oven-safe skillet or pan, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 3-4 minutes, until the onion becomes translucent and aromatic.

Cook the Rice: Toss the uncooked rice into the skillet, stirring continuously for 1-2 minutes. This lightly toasts the rice, enhancing its flavor.

Combine Ingredients: Pour in the vegetable broth and milk, followed by the broccoli florets. Then sprinkle in the onion powder, garlic powder, black pepper, paprika, and salt. Mix thoroughly to ensure all ingredients are well combined.

Bring to a Simmer: Raise the heat to bring the mixture to a gentle simmer. Allow it to simmer for about 2-3 minutes to meld the flavors before baking.

Incorporate Cheese: Remove the skillet from the heat and stir in 3/4 cup of the shredded cheddar cheese until it melts into the mixture. At this stage, you can also sprinkle some grated Parmesan on top for added flavor if desired.

Bake the Casserole: Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed.

Add Final Cheese Layer: Once baked, remove the cover and evenly sprinkle the remaining cheddar cheese over the top. Return it to the oven for an additional 5-7 minutes, or until the cheese is bubbly and golden brown.

Serve and Garnish: After removing the casserole from the oven, let it cool for a few minutes. Prior to serving, garnish with freshly chopped parsley for a pop of color and flavor.
