Ingredients

1 (9 oz) package of fresh or frozen pumpkin spice ravioli

2 cups of vegetable broth

1 cup of heavy cream

1 tablespoon of olive oil

2 cloves of garlic, finely chopped

1 teaspoon of pumpkin spice mix

1 cup of grated Parmesan cheese

1 cup of shredded mozzarella cheese

1/2 cup of fresh spinach

Salt and pepper to season

Optional: Chopped fresh parsley for decoration

Instructions

In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped garlic and sauté until aromatic, approximately 1 minute.

Add the vegetable broth and heavy cream, stirring until well mixed. Allow the mixture to come to a gentle simmer.

Stir in the pumpkin spice mix, ensuring it is evenly distributed. Season with a small amount of salt and pepper to taste.

Carefully place the pumpkin spice ravioli into the simmering broth. Cook according to the package guidelines, typically about 4-5 minutes for fresh ravioli or 6-8 minutes for frozen.

When the ravioli are fully cooked, gently mix in the fresh spinach, enabling it to wilt for about 1-2 minutes.

Lower the heat to a simmer and incorporate the grated Parmesan cheese and shredded mozzarella. Keep stirring until the cheese melts and everything is nicely blended.

Sample the ravioli mixture and fine-tune the seasoning with additional salt and pepper if necessary.

Serve in bowls, and garnish with the chopped fresh parsley if you like. Enjoy your warm, cheesy dish!
