Ingredients

1 lb boneless, skinless chicken breasts, sliced into thin strips

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

12 oz fettuccine or linguine pasta

1/2 cup grated Parmesan cheese

1/4 cup capers, drained

Juice of 1 lemon

1 tablespoon lemon zest

Fresh parsley, chopped, for garnish

Instructions

Prepare the Chicken: Season the sliced chicken strips generously with salt and pepper for flavor enhancement.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken strips in a single layer and cook for about 5-7 minutes, or until they are golden brown and completely cooked through. Remove the chicken from the skillet and set it aside on a plate.

Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant, taking care not to let it burn.

Add Liquids: Pour in the chicken broth and use a wooden spoon to scrape any delicious brown bits off the bottom of the pan. Next, stir in the heavy cream and bring the mixture to a gentle simmer, allowing the flavors to meld.

Cook the Pasta: Add the fettuccine or linguine pasta into the skillet, ensuring it’s well submerged in the creamy liquid. Cook the pasta according to the package instructions, usually around 10-12 minutes, stirring occasionally to prevent sticking and to ensure even cooking.

Mix Everything: Once the pasta reaches an al dente texture, stir in the grated Parmesan cheese, capers, lemon juice, and lemon zest. Mix everything thoroughly to incorporate the flavors. If the sauce seems too thick, add a splash of chicken broth to reach your desired consistency.

Add Chicken Back: Return the cooked chicken strips to the skillet, gently folding them into the pasta and sauce. Allow everything to heat together for an additional 2 minutes.

Garnish and Serve: Remove the skillet from the heat. Garnish with freshly chopped parsley and serve immediately for the best flavor and presentation.
