4 boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil (plus more for drizzling)

4 cloves garlic, finely minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

1 pound fresh green beans, trimmed and ends snapped

1 cup cherry tomatoes, halved

Fresh parsley, finely chopped (for garnish)

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking.

    Marinate the Chicken: In a spacious mixing bowl, combine the extra virgin olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, smoked paprika, salt, and pepper. Immerse the chicken breasts in the marinade, ensuring each piece is thoroughly coated. For added flavor, let the chicken marinate for at least 15 minutes while you get the vegetables ready.
