1 tablespoon lemon juice

2 tablespoons honey (or maple syrup for a vegan option)

1 cup heavy cream (or coconut cream for a dairy-free alternative)

1 teaspoon vanilla extract

1 cup hazelnuts, toasted and roughly chopped

2 tablespoons powdered sugar

1 teaspoon gelatin (or 1 tablespoon agar-agar for a vegan option)

2 tablespoons water

A pinch of salt

Fresh mint leaves, for garnishing

Prepare the Pears: In a small saucepan, combine the diced pears with lemon juice and honey (or maple syrup). Heat over medium heat for about 5-7 minutes or until the pears are tender. Once softened, remove from heat and allow to cool to room temperature.

    Blend the Pears: After the mixture has cooled, transfer the pears to a blender. Blend until you achieve a smooth puree. Set aside for later use.

      Dissolve Gelatin: In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for about 5 minutes to bloom. Then, gently heat it in the microwave or on a double boiler until fully dissolved. If using agar-agar, refer to the package instructions to dissolve it properly.

        Whip the Cream: In a separate mixing bowl, whip the heavy cream (or coconut cream) with powdered sugar, vanilla extract, and a pinch of salt. Continue whipping until soft peaks form.
